Sunday brunch makes all things better

The news has really been getting me down lately, all the hyperbole and knee-jerk reactions and frantic pace and depressingly stupid words and actions by that weird guy who's been hanging out in the Oval Office recently. When I get down, one of the things that makes me feel better is cooking, so Friday night I made a batch of chocolate chip cookies (mmmm) which made both me and Mr Psmith very happy.

This morning I got ambitious and decided to try a recipe Mr Psmith found last week: Sweet Potato-Green Onion Pancakes with Poached Eggs, Holiday Ham and Pepper Jam. It sounds rather involved just from the ingredients in the title, but actually wasn't that much work. The most tedious part was grating the sweet potato (those little suckers are dense, man). I didn't bother with poaching the eggs, just rinsed and wiped out the pan I used for the pancakes and fried them over easy, while the pancakes were finishing up in the oven.

The end result was DEFINITELY worth it -- an elegant and satisfying combination of flavors and textures. And pretty to boot!

It was very tasty. Supposed to serve four but they were so good we each ate two!

Politics make me frustrated so I try to know only a few of the most egregiously stupid actions of politicians.

Wonderful wonderful meal. I was going to make shredded sweet potato hashed browns/potatoes last weekend but ended up with cubes of charcoal by not paying attention to the oven.

LOL! That's happened to me, too :) These were really easy because you don't have to cook the sweet potato ahead of time. Just grate it fine and make sure the little pancakes aren't too thick. Another sweet potato recipe I want to try is this miso-sweet potato-broccoli bowl from Smitten Kitchen. One of my goals this year is to expand my repertoire and try some new things.

The ones I wanted (bookmarked the recipe too) was also not cooked first. I like adding roasted sweet potato cubes to couscous too. Colour and flavour in one.

I've been a vegetarian who eats fish(piscatarian?) for years, but this year I've decided maybe it's time to dip a toe back in the carnivore realm. We have a ton of places here where you can get local farm-raised beef, pork and chicken, so I don't feel like I'm contributing to the factory-farming industry, which was my main objection.

But it would be just as good with a slice of cheese, or a thin slice of tofu, or just as-is but without the ham.

In Chile, we tend to have a light early breakfast, no brunch, and a more "heavy" lunch. I can only have coffee and a toast. So for me, this would be a lovely lunch or something I would eat at tea time.

OMG those look delicious!! I hate pancakes but with the egg? It sounds very nice. =) The pancakes kind of look like latkes. =D Noms!
